Malt extract is a product obtained by extracting and concentrating a solution of extractive substances from malt and cereal grains.
Malt extracts are used in baking, confectionery, dietary food, pharmacology, brewing.
In the baking and confectionery industries, malt extracts:
- improve taste and color saturation, give malt aroma to the product;
- increase caramelization of the crumb, as well as make it more elastic and porous;
- extend shelf life of the finished product;
